“Breakfast is the most important meal of the day.” This is something we’ve heard throughout our lives, yet it’s no secret that, more often than not, we decide to run to our 8 a.m.’s on an empty stomach or convince ourselves that a granola bar will suffice. If you’re tired of feeling hangry but don’t know how to fit in a solid breakfast after snoozing the alarm for the 10th time, we at the Clog have the answers. So today, we give you five breakfasts you can make in less than five minutes, requiring only a microwave. Set your timers and start cooking!

Breakfast burrito

Ingredients:

  • 2 eggs
  • 2 flour tortillas
  • 2 slices of cheese (we prefer pepper jack)
  • Salsa

Directions:

  1. In a microwave safe bowl, beat the eggs and pop them into the microwave for a minute and a half, stirring every 30 seconds.
  2. Break up the cooked eggs and spread them over a slice of cheese on the tortilla.
  3. Fold the tortilla up like a burrito and microwave for another 30 seconds.
  4. Enjoy with salsa if you’re feeling particularly spicy in the morning.

Banana bread

Ingredients:

  • 1 ripe banana, mashed
  • 1 egg
  • 1 tablespoon of milk
  • ¼ teaspoon of vanilla extract
  • 1 tablespoon of melted coconut oil
  • 3 tablespoons of flour
  • 3 tablespoons of brown sugar
  • ⅛ teaspoon of baking powder
  • A pinch of salt
  • ¼ teaspoon of ground cinnamon (optional)

Directions:

  1. In a large coffee mug, mash your banana with a fork and then add in the remaining ingredients. Mix well.
  2. Pop the mug into the microwave for two to three minutes, checking the progress of the bake at the 2 minute mark.
  3. Once done, decorate your mini banana bread with any toppings you desire: chocolate chips, fresh sliced bananas or even some pecans will make a great addition!

Omelette

Ingredients:

  • 2 eggs
  • 2 tablespoons of milk
  • 1 green onion
  • 1 teaspoon of parsley
  • 8 cherry tomatoes
  • A pinch of salt and pepper

Directions:

  1. Chop up the green onion, parsley and tomatoes. Then, set aside.
  2. In a large mug, add the eggs and whisk them together with a fork.
  3. Add the parsley, green onions, milk, salt and pepper and continue to whisk all of the ingredients until they’re mixed.
  4. Microwave for one minute and stir. Repeat process for an additional minute.

Banana breakfast quinoa

Ingredients:

  • 1/2 cup of quinoa
  • 1 cup of cold water
  • 1/2 teaspoon of cinnamon
  • 2 teaspoons of butter
  • 1/4 cup of milk
  • Maple syrup
  • 1 banana

Directions:

  1. In a large mug, stir the cold water, cinnamon and half of the butter into the quinoa.
  2. Microwave for four minutes and stir. Then, microwave the mixture for three more minutes.
  3. Remove from the microwave, cover and let it sit for two minutes.
  4. Fluff quinoa with a fork and stir in the remainder of the butter.
  5. Top with milk, maple syrup, banana slices and a dash of cinnamon for a party in your mouth.

Blueberry pancakes

Ingredients:

  • 3 tablespoons of all purpose flour
  • ¼ teaspoon of baking soda
  • 2 teaspoons of maple syrup (honey or agave will also work)
  • 1 tablespoon of milk
  • 1 tablespoon of vegetable oil
  • 1 egg
  • 1 tablespoon of blueberries

Directions:

  1. Mix together all of the ingredients (except the blueberries) in a large mug until smooth.
  2. Stir in the blueberries.
  3. Microwave for one minute or until the top is firm to the touch.
  4. Top with a little maple syrup, honey, agave or some more blueberries (if you’re feelin’ fancy).

Now that you have a breakfast for every day of the week, you’re on track to start your mornings the right way. Just make sure you don’t forget your key!
